Braised lettuce, hemp & miso cream, buckwheat galette and crunchy herby granola

A delicious recipe from Anne-Laure of Primesautier that she created when catering for a wedding. It celebrates all things local, seasonal and delicious about Brittany.

Ingredients

Braised lettuce

  • 1 head of lettuce (little gem works well)

  • Olive oil

  • Salt

Hemp + lettuce cream

  • Outer leaves of the lettuce 

  • 25gr hemp oil

  • 35gr apple cider vinegar

  • A thumb of fresh ginger

  • 1 tsp mustard

  • 1 tsp light miso

  • Zest of 1 lemon

  • 60gr soy cream

  • 25gr toasted hemp seeds

  • 10gr agave

  • 1 garlic clove

  • Salt and pepper to taste

Buckwheat galette

  • 100g buckwheat flour

  • 250gr water

  • ½ tsp salt

Method

Braised lettuce

  1. Remove outer leaves of the lettuce ; reserve outer leaves.

  2. Cut to have 4 wedges. Heat a frying pan with olive oil and carefully place each lettuce wedge onto the pan. Once that side is slightly golden, flip over and do the same. Reserve them while prepping the cream.

Hemp + lettuce cream

  1. Heat again your frying pan and add the reserved outer leaves of the lettuce. Cook them as you would do for spinach with a little bit of salt. 

  2. Add them to a blender and blend with all the other ingredients. You should have a thick cream, as a mayonnaise. Reserve in the fridge.

Buckwheat galette

  1. Mix everything and if you can let if ferment overnight, it will enhance the flavour! Otherwise at least 2 hours. 

  2. Heat a frying pan, add vegan butter or olive oil and once hot add one little ladle of batter. Cook each side until golden, trying to do them as thin as you can ! It's not pancake. If your batter is too thick add water).

Plating up

Drizzle some cream on your lettuce, add toasted hemp seeds, your favorite savoury granola and seasonal herbs. 

Place it on one side of your buckwheat galette (you can also add some cream at the bottom) and fold the galette over. Add some toasted hemp seeds at the bottom of your plate and place the galette on it.
