ROAR Rocky Road

This is a take on a rocky road laced with adaptogens, seeds, and mood-boosting ingredients. I love to create snacks with a little extra mind support and here the lion's mane, seeds and cacao are particularly supportive. The seeds give a nice crunch and the coffee icing is an extra treat.
These Keto-friendly bars are quick to make and provide an energy boost at any time of day.

Ingredients
100g raw chocolate (your favourite raw dark chocolate bar)
30g coconut oil
50g tahini
20g pumpkin seeds
20g sunflower seeds
20g chia seeds
50g dried goji berries, mulberries and blueberries (or your favourite dead fruit)
1 tbsp yacon syrup or molasses to sweeten
¼ tsp salt
Icing
100g tahini
50ml (liquid) Vivo Life Magic Coffee
50g coconut oil, melted
1 tbsp yacon syrup or molasses
Method
Chop the chocolate and place it in a heatproof bowl with the coconut oil.
Bring a small saucepan of water to a simmer and then place the bowl into the water and carefully melt the chocolate, stirring gently making sure not to get any water inside.
Once the chocolate is melted, take the bowl out of the water and add the rest of the ingredients to the bowls and mix well to thoroughly combine.
Pour in a Tupperware container or tin, lines if needed, and leave to set in the fridge for 1-2 hours until set.
While the chocolate is setting, make the icing. Brew the coffee as per the packet instructions, mix all of the ingredients together until smooth and set aside.
Store in a sealed container in the fridge for up to one week.
