White Bean & Sage Dip

This glorious White Bean & Sage Dip is delicious and you can serve it on toast for a funky brunch or as an element in a sharing lunch. The recipe features the best beans in the business; Bold Bean Co.

Ingredients

  • 4 tbsp olive oil⁠

  • 1 bunch sage⁠

  • 1 lemon, zested + juiced⁠

  • 1 x 660g jar white beans

  • 2 cloves minced garlic⁠

Method

  1. In a small frying pan, heat oil on medium

  2. Add the sage leaves and cook until crispy⁠

  3. Take 2/3rd of the sage leaves out of the pan⁠

  4. Preserve the rest for decorating⁠

  5. Add the entire jar of beans & stock to a blender⁠

  6. Add garlic, 2/3rds of sage oil, lemon zest & juice⁠

  7. Blitz it all up!⁠

If making as a dip:⁠
Spoon the dip onto a plate, drizzle with the last bit of the sagey oil, some lemon zest, freshly cracked black pepper and the remaining sage leaves, and serve with crisps, crackers + crudites.⁠

If making as a brunch:⁠

Spoon the dip onto sourdough toasts, and drizzle with the last bit of the sagey oil, some lemon zest, freshly cracked black pepper and the remaining sage leaves.
