In this workshop, Rachel de Thample will inspire you with a realm of fermenting techniques and recipes to make drinks to balance your gut flora, boost your immune system, and feel ready to take on the world.

You’ll learn how to utilize the healing powers of everyday ingredients including herbs and spices, and how to use them creatively to brew up remarkable teas, tinctures and tonics such as:

  • Turkish tahini cacao enriched with hormone-balancing ingredients sweetened with prebiotic dates in place of sugar

  • A fermented take on the Balinese tonic jamu kunyit

  • Lemon drop elixir enriched with cardamom to boost immunity

Wunder Workshop // 2nd February 18:00 to 19:15 GMT

The second event in the series is with Wunder Workshop, who focus on sourcing regeneratively grown, organic herbs, spices and mushrooms to create the ultimate wellness rituals.

During this masterclass Tom will share the history and techniques used to create your own potent-plant teas and tinctures to add to your routines to support your immunity during these colder months.

RACHEL DE THAMPLE is an award-winning author who has worked in food, health and sustainability for more than 20 years. She teaches fermentation and seasonal nutrition courses at River Cottage in Devon, as well as Petersham Nurseries and Plant Academy in London. She served as Course Director of the College of Naturopathic Medicine’s Natural Chef diploma course, was the Head of Food for the organic retailer Abel & Cole and Commissioning Editor of Waitrose Food Illustrated. She’s written six books including Tonics & Teas and the River Cottage Fermentation Handbook, which won a Guild of Food Writer’s Award.

TOM SMALE is the co-founder of Wunder Workshop. Using the experience gained in the pharmacological world and a deepening understanding of traditional plant-based remedies, he helps to research ingredients that are functional and effective. He is also the co-author of Super Root Spices, a passionate plant-based chef and baker.
